I got inspired after seeing Sashanan's 'Ship Missions' Section in his FAQ at www.gamefaqs.com (search for 'Sid Meier's Pirates' at the site to find it.)...
...I though, it would be nifty to have more detail to it so...
...After many game hours of playing, searching, and testing, I came up with the following comprehensive chart for what ships are used when in the game. Under each section comments may appear about ships in that section.
With this, one can find various ways to obtain various ships
For example,
for a Royal Sloop, attack Spanish cities until you see a Royal Sloop as a Pirate Hunter or a New Warship.
for a Brig of War, Frigate, or Large Frigate, same as Royal Sloop, except you attack the English.
For other ways to find these ships and other ships, just read the following chart.

The first row is much rarer than the second two.
Treasure Ship

To see the heavier escorts, harrass an individual city in question more.
There could be more, but at this point I think it's unlikely.

These appear to be random.
Remember, capture ships, don't sink them, to provoke the appearance of pirate hunters quicker.

These spawn in response to an escort mission you're on.
Sloop of War for the Pinnace Class, Brigs for everything else.

it's possibly missing a few entries in places indicated above, please do comment if you've seen the missing ships.
if you're submitting additions, be careful on reporting on Raiders, be sure they're not Pirate-Hunters that turned into raiders cause you ducked into.
I've updated the above chart, reflecting the confirmation of 2 more raiders and privateers I've seen. I feel it's probably at it's final form, and I'll update it in a few days to reflect that.

Well, this looks pretty sweet!
Good job there, matey.
Perhaps you could contact Falconer or another member of the Cutlass Isle staff, so they could post it on the guide page of this forum.
Or somewhere else where it could easily be downloaded for use.
I think many people who just started playing Pirates! may find this very usefull.
